Cider aficionados will rejoice as Tin City Cider Company, located at the southern edge of Paso Robles, is now serving up a variety of light, crisp and flavorful barrel fermented ciders. Located in “Tin City” where a community of wine artisans and brewers is slowly becoming the city’s newest and hippest hub for tastings. Tin City Cider opened its doors earlier this month with a tasting room now open daily.
Tin City Cider is a collaboration of three wine makers, Curt Schalchlin, Mikey Giugni and Andrew Jones, who decided to combine their skills and try their hand at producing the best ciders possible. The trio say they are dedicated to crafting the highest quality ciders using only California grown ingredients and are making waves in the cider scene with their unique and robust flavors.
Pioneering the art of cider making
Currently, cider making is being left to the renegades and pioneers. Crafting elegant cider is similar to making wine, but with far less established guidelines. Creating quality cider without synthetic sweeteners and added carbonation is truly an art form which Tin City Ciders has nailed.
Co-owner, Andrew Jones, who also owns the popular Paso Robles wine company Field Recordings, began making cider in June 2015. “Like wine”, he says, “apple orchards need a very specific climate to produce the best apples for making cider.” Jones believes Paso Robles is the perfect climate to produce the best fruit for making cider and is currently focused on narrowing down where and how to grow the best apples for cider making in the area. For him, the best ingredients are a priority and he wants to be the producer who sets the standard for growing apples meant specially for creating great ciders. Not only for taste, but also for economical and environmental reasons is it important to Jones that his apples come from California. Most ciders use apples trucked in from Washington State which is expensive and not beneficial for the environment or our local economy. Jones believes it is important to support the local economy and is committed to doing so.
Tin City’s cider flavors include the “Templetucky,” which is fermented and aged in old bourbon casks for 4 months and co-fermented with blood oranges from Cambria. It is lightly sweet, mostly dry, and packs a 9.5-percent alcohol content. Another favorite is the “Bocce Club Saison,” made with California cherries, which is sweet, light and refreshing. Tin City Cider is now being served on tap at over 20 restaurants and bars around the county. The company is proud to be self-producing, self-distributing and has a dedicated salesman on their team for servicing accounts.
Tin City Cider has many exciting things coming up on the horizon. Currently, they host live music on the weekends and will soon be collaborating with local restaurants to provide delicious on-site food for customers, including a Sunday Brunch. Tastings are $10 for four ciders. Customers can join the Cider Club and receive a free growler with membership.
Tin City Cider Company is located at 3005-A Limestone Way in Paso Robles. The tasting room is open Mon-Thurs 1-7pm, Fri-Sat 1-8pm and Sundays 11 a.m.- 5 p.m.
